Egg Muffins

Ingredients

  • 8-10 eggs

  • 1/3 c milk

  • 1 tsp salt

  • 1/2 tsp pepper


Suggested fillings:

  • Shredded cheddar cheese

  • Cherry tomatoes

  • Spinach

  • Bacon

  • Mushrooms

  • Peppers


Steps

  1. Preheat oven to 350. Line a muffin tin with silicone muffin liners or spray the muffin tin well with nonstick spray.

  2. Prepare the fillings. Crack the eggs into a large liquid measuring cup and whisk with the milk, salt, and pepper.

  3. Fill each muffin liner with filling, then pour the egg mixture into each liner and fill 3/4 full.

  4. Bake for 20-25 minutes or until a knife inserted into the center comes out clean.
